Domaine Dujac共有11.5公顷的葡萄园,有5块是顶级葡萄园 (Grand Cru):Clos de la Rocha、Clos-st-Denis、Bonnes Mares、Charmes Chambertin 及 Echazeaux;另外有4块是一级葡萄园 (Premier Cru)。其中 Gevrey chambertin 的 Les Gruenchers 及 Aux Combottes 都享有极高的评价。
酒厂简史

Mr. Jacques Seysses 于 1967年建立Dujac 酒厂,矢志酿出优美的 Burgundy 好酒。历经数年努力后,Dujac 在 1972年逐渐受到法国新闻界(法国知名酒类杂志 Gault-Millau)及高级餐厅的瞩目。1986年,Dujac 酒厂聘请 Christophe Morin 担任全职的葡萄园管理人,负责照料果实,他丰富的经历与能力亦确实为酒厂提升品质。现在,在全世界的高级餐厅中,您都可以品尝到 Dujac 的酒。Dujac的酒常在盲饮中脱颖而出,复杂的架构、浓郁的果味常击败许多名酒,其中Dujac的 '78 Clos de la Roach在最近一场旧金山行家品酒会中,与同是'78年的6款DRC红酒一起盲饮,评鉴结果与La Tache不相上下,称它为小DRC真不为过。

年青有学问的Dujac主人
Dujac 主人 Mr. Jacques Seysses 桑克塞斯是一个很特别的人物,年青有学问,对于酒的品质有一股强烈的追逐热忱,Jacques 不但仿效DRC,也拜师 Domaire Pousse d'or 的Gevard Potel。在他30年的酿酒经验中不但把自己的名誉打响,亦成就了不少学徒,其各自之后的发展都有相当大的成就。
Dujac 极少以人为方式介入,而酿造出天然风味的葡萄酒。他并不喜欢过滤或筛选,因为这些过程会除去酒本身原有的丰富特色。Dujac因此的酒在年轻时即有沈淀物。酿制绝佳的勃根地酒关键在于限制产率;勃根地最主要的葡萄品种「Pinot Noir」敏感且细致,若过度种植,品质就会明显下降,因此Dujac 长年将产量保持在每公顷3500公升。

Dujac使用百分之百新法国橡木酿造顶级酒,储放在新橡木桶中的顶级酒会因此吸收较多的新橡木香气,却不会变得木味过重。为得到最理想的橡木,Seysses会预先购买精选的橡木(而不是做好的橡木筒),并将它存放三年后,再制成橡木筒。
Dujac在葡萄发酵期间并不完全去除葡萄茎柄,茎梗会吸收些许颜色深度,但若去除它却会损害葡萄皮而使发酵加快或不规律。所以Dujac的葡萄酒色泽会略微淡薄,可不要被它的浅色泽误导了。
Dujac 的另一酒厂-- Domaine de Triennes
Jacques和DRC的Albert de Villaine是多年的好友,不但在Burgundy 酒域享有盛 名,Dujac 的酒口感有点接近DRC,并且两人的贤内助都是美国人,两人于1990年在法国东 南部共同投资一块葡萄园,Domaine de Triennes崔宁酒厂,Jacques由亲自监工酿酒以期将来再创出另一支受大家喜爱的好酒。

97 Bonnes Mares - 94
One of the most seductive wines fashioned in this generally opulent and forward vintage. Ruby-colored and revealing a gorgeously feminine nose of salty, iodine-laced, sweet, red fruits, this is a fat, super-ripe, and concentrated powerhouse. It regales the palate with dense layers of jammy, black and red fruits, interspersed with earth and stones. This complex, extremely long-finishing, complete wine should offer wonderful drinking over the course of the next decade.
98 Bonnes Mares - 91
This is clearly the best wine in the cave today. Full, ample, plenty of backbone, plenty of flesh. Rich and concentrated. Very good grip. Long and classy and statisfying.
97 Charmes-Chambertin - 90
Spicy/earthy cherries can be discerned in the ruby-colored 1997's delightful aromatics, it is elegant, lush, and lively. Concentrated layers of black fruits are intermingled with red berries, stones and Asian spices in its character as well as in its 30+ second finish. Anticipated maturity: now-2008.
98 Charmes Chambertin
This is a lot more serious. Fullish and plump. Nicely cool and fresh. Elegant and profound. Good acidity. Long and complex.
97 Clos de la Roche -93+
This is a wine that combines Dujac's trademark elegance with power, density, and jammy, super-ripe flavors. Candied berries, chocolated-covered cherries, and red currant liqueur are found in this medium to full-bodied, complex, and mouth-coating offering. Projected maturity:now-2009.
98 Clos de la Roche - 91
More austere flavours. Fresher. Slightly more to it. But it is not exactly very big or concentrated. Nor very intense and long. Very good indeed though. From 2004.
97 Clos St. Denis - 92
This wine reveals sweet candied cherry aromas, intermingled with violets, roses, and spices. It possesses outstanding breadth, precision, and lace-like finesse, yet also reveals an impressive underlying power. This expressive, red berry-flavored, and admirably persistent wine is already a delight to drink, yet has the capacity to mature and evolve over the next 8-10 years.
97 Gevery-Chambertin les Combottes - 90
Rubby-colored and reveals aromas of sweet red/black fruits dusted with talcum powder. Medium-bodied, this tangy, fresh , yet expansive wine displays briary blackberry and cassis flavor. It is silky-textured, elegant and tightly wound. Projected maturity:2000-2009.
98 Gevery Chambertin, Les Combottes - 90
Again a pleasant, soft, ripe wine without a lot of backbone. A little slight. From 2002/2003.
97 Echezeaux - 90
Displays delightful aromatics reminiscent of flowers, red cherries, and strawberry candy. It is firmer, more structured, and less expressive than the Clos St. Denis, yet offers a hugely pleasing and powerful burst of black fruits that saturate the taster's palate. This is a medium-bodied, delineated, and refined wine that will be at its best if comsumed over the nest 7+ years.
98 Echezeaux
Medium to medium-full body. Fresh, plump fruit. Good grip. This is quite intense, certainly very stylish and finishes well. Very good indeed. From 2004/2005.
98 Morey St. Denis - ---
More austere than Chambolle-Musigny. Slightly harder. Very good grip. Medium-full body. Classy and intense again. Lovely long finish. Very good. From 2003/2004.
98 Chambolle Musigny, Les Gruenchers
A pleasant, soft, ripe wine without a lot of backbone. A little slight. From 2002/2003
Delicate but poised and complex. Lots of charm and ripe fruit. Medium weight. Very good. From 2003/2004.
